Recipe: Asian edamame salad

Ingredients

Salad

  • 12 ounces shelled edamame, cooked, cooled

  • 1 cup diced cucumber

  • 1 red bell pepper, diced

  • 2 green onions, sliced thin

  • ¼ cup chopped cilantro

  • 2 teaspoons sesame seeds

Vinaigrette

  • 2 tablespoons rice wine vinegar

  • 2 teaspoons olive oil

  • 1 teaspoon sesame oil

  • 1 teaspoon low sodium soy sauce or tamari

  • 2 teaspoons honey

  • ½ teaspoon sriracha, if desired

  • ¼ teaspoon ground ginger

Instructions

  1. In a large bowl, combine all the salad ingredients. 

  2. In a small bowl, whisk the vinaigrette ingredients until combined.

  3. Pour the vinaigrette over the salad and toss everything together. Serve immediately or cover and chill until ready to serve.
