Recipe: Festive yogurt cups

Phyllo cups filled with mixed berries

Items needed:

  • Phyllo shells (found in the freezer section)
  • Dark chocolate for melting
  • Greek yogurt – favorite flavor or variety
  • Mixed berries or favorite berry for topping

Directions:

  1. For added crunch, bake the shells before filling – place desired number of empty shells on a baking tray and bake at 350 degrees for 3 to 5 minutes.
  2. Melt chocolate by microwaving in a microwave-safe container. Melt at medium power (50%) in 30-second intervals, stirring after each interval. Be careful not to overcook.
  3. Use a spoon to coat the inside of shells with melted chocolate. Allow to cool/harden.
  4. Just before serving, spoon your favorite yogurt to fill the shell (approximately 1 tablespoon).
  5. Top yogurt with your favorite berry, pomegranate arils, toasted coconut and whipped cream.
  6. Use melted chocolate to drizzle over top, if desired.
  7. Serve immediately.
