Recipe: Taco soup

Ingredients:

  • 1 can black beans, rinsed and drained
  • 2 cans (14.5 oz) chicken broth
  • 1 bag frozen “fiesta blend” vegetables
  • 1 jar of your favorite salsa

Directions:

  1. In a large pot, combine beans, chicken broth, vegetables and salsa. Cook over medium heat until heated through.
  2. Serve topped with cheese, sour cream, avocado, etc. if desired.

Nutritional information: 1 serving equates to approximately 234 calories, 42 grams carbohydrates, 16 grams fiber and 12 grams protein.
