Peach crisp

Ingredients

Peach filling:

  • 5 ripe peaches
  • 1 Tbsp. brown sugar
  • 1 Tbsp. cornstarch

Oat crisp:

  • ½ cup rolled oats
  • 1/3 cup oat flour
  • ¼ cup brown sugar
  • ¼ cup walnuts, almonds, or pecans (optional)
  • ¼ tsp. salt
  • ¼ tsp. cinnamon
  • 2 Tbsp. butter
  • ½ tsp. vanilla extract

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9-by-9-inch baking dish.
  2. Cut the peaches into ¾-inch slices and add them to a large mixing bowl.
  3. Add the brown sugar and cornstarch. Toss until the peaches are fully coated, then transfer them to the greased baking dish.
  4. In a separate bowl, mix oats, oat flour, sugar, salt, and cinnamon. Add melted butter and vanilla until the mix is crumbly.
  5. Evenly sprinkle the crumble topping over the peaches.
  6. Bake for 30 to 38 minutes, or until the topping is golden brown and the peaches are bubbling.
  7. Let cool for 10 to15 minutes before serving so the filling can set.
  8. If desired, top with chopped walnuts, almonds, or pecans before serving.
