Recipe: Asian edamame salad
Ingredients
Salad
12 ounces shelled edamame, cooked, cooled
1 cup diced cucumber
1 red bell pepper, diced
2 green onions, sliced thin
¼ cup chopped cilantro
2 teaspoons sesame seeds
Vinaigrette
2 tablespoons rice wine vinegar
2 teaspoons olive oil
1 teaspoon sesame oil
1 teaspoon low sodium soy sauce or tamari
2 teaspoons honey
½ teaspoon sriracha, if desired
¼ teaspoon ground ginger
Instructions
In a large bowl, combine all the salad ingredients.
In a small bowl, whisk the vinaigrette ingredients until combined.
Pour the vinaigrette over the salad and toss everything together. Serve immediately or cover and chill until ready to serve.
