Heart healthy recipe: tossed grilled apple salad

Salad dressings from the store can be pretty high in sodium and saturated fat. Making an olive oil based dressing like the one in this recipe is a healthier option, especially for your heart. 

Ingredients:

  • 3 tablespoons olive oil
  • 1/3 cup cilantro, minced
  • 1/3 cup orange juice
  • 1/3 cup white vinegar (Or balsamic)
  • 1 tablespoon honey
  • 1/2 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon Sriracha sauce
  • 1 apple cut into 1/2 inch wedges
  • 2 1/2 ounces spring mix salad greens
  • 1/2 cup walnut halves, toasted
  • 1/4 cup blue cheese, crumbled

Instructions:

  1. In a large bowl, whisk together olive oil, cilantro, white vinegar, honey, garlic, salt and Sriracha sauce to make the dressing. 
  2. Toast the nuts.
  3. Place apples in a zipper storage bag and toss with 1/4 cup of the dressing. Set aside remaining dressing.
  4. Place apple slices on a grill rack over medium heat. Grill until tender and lightly browned (three to four minutes per side) brushing with reserved marinade. 
  5. Place greens in a bowl, add the dressing and toss to coat. 
  6. Plate greens and top with grilled apples, walnuts and cheese.
