Spiced Pumpkin Soup Recipe

Every year when October rolls around you can spot pumpkin flavored coffees, cookies and casseroles. But, many are filled with hidden sugars and fats. If you’re looking for a healthy, tasty pumpkin recipe to serve this holiday season, try my Spiced Pumpkin Soup. One serving is only 97 calories! Now that’s something to feel good about.

Spiced pumpkin soup recipe

  • 2 cans pumpkin puree
  • 2 cans vegetable broth
  • 2 cans light coconut milk
  • 1 tbsp olive oil
  • 3 to 4 tsp mild yellow curry powder
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • 2 apples, 1 green and 1 red (fuji or honey crisp)
  • 2 large carrots
  • 1/2 small onion
  • Cornbread or garlic croutons

Directions:

1.) Dice apples, carrots and onion into 1/4 inch cubes. Small pieces will help the soup cook faster.

2.) In a large soup pot, sauté the olive oil, apples, carrots and onion over medium high heat for about 5-7 minutes until they are softened. Add a sprinkle of salt, pepper and broth to pot. Stir. Add pumpkin puree, coconut milk and rest of spices to the pot. Boil gently for 10 to 15 minutes over medium heat.

3.) Garnish with a few cornbread croutons. Serve immediately.
