Summary
Aim-1: Assess initial effects of an immersive AICR-based, fiber-focused education intervention on cognitive outcomes (as measured by the Functional Assessment of Cancer Therapy - Cognitive Function (FACT-Cog) questionnaire) after 12 weeks in CRC survivors, compared to controls.
Aim-2: Explore effects of an immersive AICR-based, fiber-focused education intervention on mechanistic biomarkers of inflammation (CRP, TNF-a;, IL-6, IL-10, lipopolysaccharide binding protein (LBP)).
Aim-3: Evaluate feasibility, tolerability, and acceptability of increasing fiber to meet the AICR recommendations (30 g/d) and identify barriers and facilitators to compliance through semi structured interviews.
